Refreshing cantaloupe and feta salad
Delicious healthy and hydrating cantaloupe and feta salad with cucumbers and mint.

- 1/2 Cantaloupe
- 1 English cucumber
- Mint
- Lemon vinaigrette
- 10 oz Feta cheese
Remove the seeds and skin form half of a ripe cantaloupe, cut into bite size pieces and place in a mixing bowl.
Cut the cucumber in half and cut each half into 1/2 inch slices on a bias and add to the cantaloupe.
Pull whole mint leaves off the stems and add them to the bowl.
Add the dressing and toss everything to coat.
Cut the feta into bite size cubes and add to the bowl. Gently toss with the other ingredients so as not to break it up too much.
Put the salad on a serving plate and finish with kosher salt or flaky sea salt.
You can remove the seeds from the cucumber if you prefer. If the mint leaves are very large tear them into smaller pieces. If you don't want to cube the feta you can crumble it instead or get already crumbled feta.
Sub out the dressing for lemon juice and olive oil or balsamic vinegar and olive oil. For a little added sweetness use balsamic glaze.
