When the weather starts to turn, I’m not quite ready to say goodbye to summer—and this salad is my way of holding on a little longer. Juicy cantaloupe, crisp cucumber, salty feta, and fresh mint come together in a bowl that tastes like sunshine. It’s hydrating, cooling, and full of flavor without being heavy.
I love how the sweetness of the melon balances the briny feta, while the cucumber and mint keep everything fresh and bright. It’s the kind of dish you can serve at a picnic, alongside grilled chicken, or even as a light lunch on its own. Best part? It takes just minutes to throw together, but looks and tastes like something special.

Refreshing cantaloupe and feta salad
Equipment
- Chef's knife
- cutting board
- mixing bowl
- serving platter optional
Ingredients
- 1/2 Cantaloupe
- 1 English cucumber
- Mint
- Lemon vinaigrette
- 10 oz Feta cheese
Instructions
- Remove the seeds and skin form half of a ripe cantaloupe, cut into bite size pieces and place in a mixing bowl.
- Cut the cucumber in half and cut each half into 1/2 inch slices on a bias and add to the cantaloupe.
- Pull whole mint leaves off the stems and add them to the bowl.
- Add the dressing and toss everything to coat.
- Cut the feta into bite size cubes and add to the bowl. Gently toss with the other ingredients so as not to break it up too much.
- Put the salad on a serving plate and finish with kosher salt or flaky sea salt.
